The Eierschecken baker tells the original story and the peculiarity of the city wall, which had to be repaired with quark during the siege because mortar was running out. The bakers then ran out of quark in their bakeries. But they knew how to help themselves: instead of quark, they used more eggs and sugar - the Freiberger Eierschecke was invented.
