Around 50 businesses in Cancale are involved in oyster farming. Their annual harvest of around five thousand tons of huîtres creuses (flat oysters) and one thousand tons of huîtres plats (flat oysters) represents a quarter of France's total production. The oyster parks stretch over more than 500 hectares. Two of them are Olivier Bernier and Stéphane Quemerais. In 2022 and 2025, the two breeders, who have been collaborating for more than ten years, received the gold medal at the Paris Agricultural Show for their Fine de Cancale oyster of size 3.
