A renowned restaurant, internationally renowned as one of the best in the city of Évora...

"Visited by Portuguese and tourists, an ambassador and defender of Alentejo cuisine worldwide, it was founded in 1945 by Manuel Fialho and has become a world reference when it comes to “awakening the senses” through Portuguese cuisine, particularly Alentejo cuisine. Located in the historic centre of Évora, considered a World Heritage Site by UNESCO in 1986, O Fialho is still run by the eldest son, Amor Fialho, who does the honours of the house and its recipes are overseen by the third generation of the family, Helena and Rui Fialho. Over the course of seven decades, the Fialho family has dedicated itself to the art of hospitality and the good Alentejo manner, valuing good and genuine regional cuisine and an excellent wine cellar. At the Fialho restaurant, we work with respect for the raw materials, highlighting the authentic flavours of Alentejo."
