Extensive salt marshes stretch around Mont-Saint-Michel, where Suffolk sheep graze. The animals feed on salty grasses and coastal plants such as samphire and thrift. This special diet gives the meat its characteristic, finely spicy aroma. The salt marsh lamb, known as Agneau de pré-salé, is one of the region's culinary specialities and enjoys protected designation of origin status in France.
