Since the end of the 19th century, peat has been extracted using the open-cast mining method in drained open pits. After the deposits have been drained, white peat is processed for trade by milling and pressing to reduce the volume. Black peat used to be dug by hand and air-dried in heaps or squats. Today, peat is no longer dug by machine, but milled or dredged using the flow method and dried first by pressing and finally by open storage until it is used.

Traditionally, peat was used primarily as fuel. Since ecologists now view moors as biotopes worth preserving, mining from intact moors no longer takes place in Germany; former moors that were drained in the past are primarily used as peat deposits.
