A beautiful tribute to Aveiro's sweet specialty, ovos moles. These come in various shapes, but the shell-shaped wafers are probably the most popular. Thanks to the abundance of egg yolk that inevitably remained when large quantities of egg whites were used to starch laundry, nuns mixed Madeira sugar with the yolk to preserve it. This is how Aveiro's traditional sweet was born.
