Zoigl (also called Zeugl or Kommunbier) is a bottom-fermented beer that is particularly popular in northern Upper Palatinate and is brewed communally by private individuals. The mash for Zoigl is boiled and hopped in the communal brewery. The individual Zoigl brewers take the resulting wort home with them and add yeast to it in the fermentation cellar. Since each Zoigl brewer follows his own recipe, variations in the taste of Zoigl from town to town, but also from innkeeper to innkeeper, are common and typical for Zoigl beer.
