From the area around Ammerthal, traces of settlement can be found archaeologically as early as the Bronze and Hallstatt Ages. In Carolingian times, a large-scale fortification was built in what is now Oberammerthal, probably on the initiative of the Franconian royal family, which appeared in 1003 in the course of the Schweinfurt feud as civitas Armardela in the chronicle of Thietmar von Merseburg. In the 10th century Ammerthal belonged to the direct sphere of influence of the Counts of the Nordgau, the Counts of Schweinfurt. During the clashes of 1003, the civitas Amardela was besieged by the troops of King Henry II and apparently partially destroyed after the surrender. After 1035 Ammerthal became an administrative seat of the Counts of Sulzbach in the core area of the Sulzbach property around Sulzbach and Kastl. In the late Middle Ages, the place belonged to the Amberg Rent Office and the Pfaffenhofen Regional Court of the Electorate of Bavaria. The Order of Malta had a commander there.

In the course of the administrative reforms in Bavaria, today's municipality was created with the municipal edict of 1818.

In Ammerthal there were three noble seats, Ammerthal Castle in Oberammerthal, which was replaced by Ammerthal Castle in 1590, and Spitz Castle in Altammerthal.
