    The brewery's initial interior was very simple. It was not until 1911 that the building was fitted with mechanical equipment, which was then operated electrically. Because there was no way of cooling the brew, brewing was only permitted at certain times of the year - from Michaelmas, September 29th, to Walburga, April 30th.

    Since 1651, every citizen of Mitterteich who owned a house and property and had citizenship had the right to brew. In order to brew, it was necessary to own a storage cellar. The priest and the mayor were allowed to brew, regardless of these regulations.

    Even today, some home brewers still exercise their brewing rights. They have joined together to form a brewing association. They brew the full amount, 42 hectoliters, once a year. The amount is then divided among those interested. Each home brewer can produce up to two hectoliters of Zoigl without having to pay taxes. However, they are not entitled to sell or serve Zoigl beer.

    Since 1516, the "Zoigl", a bottom-fermented, unfiltered beer, brewed in the communal brewery by the entitled citizens and later served publicly in his own house. With the awarding of market rights in 1516 by Abbot Andreas, all Mitterteicher citizens were given the right to brew beer without paying levies to the monastery of Waldsassen. In Mitterteich there are still three "Zoiglstuben" today (2017). If from one of the houses either a tuft of branches (the "Buschen") or a hexagonal star ("Zoiglstern") hangs, this means that the "Zoigl" will be served again. This is best tasted hearty Zoiglbrotzeiten.
