A culinary journey of a special kind leads to the inn Adelskammer in Carlsgrün, the oldest, still run inn in the Franconian Forest.
Hot meals are cooked in the aristocratic chamber on a wood-fired oven. Innkeeper Renate Gebelein understands the production of so many original Franconian specialties, such as the Quärkla, a kind of small, low-fat sour-milk cheese that turns glassy-yellow after a long maturation period and takes on a hearty, spicy taste. Or Schwarzsauers with dumplings, baked turnips to roast pork with crispy crust and much more - for lovers of real Upper Franconian cuisine, the Gasthaus Adelskammer is a real insider tip. And, of course, the dumplings are made by hand as part of Renate Gebelein's self-made potatoes that grow on their own field.
