Martin Paul Pohl and his family manage the estate, which, thanks to the dry inner-Alpine climate and permeable soils of the Vinschgau Valley, is particularly well-suited to Burgundy varieties. In addition to Pinot Blanc, Pinot Grigio, and Pinot Noir, they also produce Gewürztraminer and, in good years, Cabernet Franc.

The estate emphasizes natural wines, with special flagship wines such as the Pinot Noir Riserva Fleck, which matures for 24 months in oak barrels, and the Gewürztraminer Spätlese. With an annual production of approximately 16,000 bottles of wine, viticulture has established itself as an important part of the business. In addition, the Köfelgut operates an apple orchard, an asparagus field, and a distillery where grappa and brandy are produced from its own fruit.
