It all began in 1924, when what is now the largest monastery cheese dairy in Europe was founded by Brother Leonhard on St. James' Day, July 25th. Specializing in the production of soft and semi-hard cheese, Klosterkäserei Schlierbach is now the market leader in the segment of soft cheese with red culture.

Hearty organic cheese specialties have been produced since 1999.
In 2008, the cheese masters started making cheese specialties from sheep's and goat's milk. The organic range of the Schlierbach monastery cheese dairy has been expanded, creating a new focus for the range.

With the conversion to a purely organic operation in 2012, customers are guaranteed access to regional food of the highest quality in the future.

Before accessing Schlierbach Abbey, follow a few steps of the Käsemaus - look for the next but one sign in the series "On the trail of cheese", right next to the tanks.
