Windischeschenbach is known as the capital of Zoiglbier. Already since 1455 she owns the communal brewery law. In 1852, local residents joined together to form the community brewery company "Brauende Bürger von Windischeschenbach" and built the Kommunbrauhaus, which still exists today in Braugasse. On bridal days you can even follow the brewing process here.

Zoigl is brewed in the communal breweries, which are financed and maintained by the "brewing citizens". For this, every member of this association-like association has to pay the so-called “Kesselgeld”, a kind of membership fee.

Zoigl is a bottom-fermented beer that is brewed in the traditional way. The mash – a mixture of water and barley malt – is first boiled in the open brewing pan over a wood fire, then hopped and then heated up again as “spice”. This brew is now placed in large containers in the cellar, where the yeast does its work. After about 10 days of fermentation, the Zoigl beer is filled into the barrels, where it has to mature for several more weeks.

Although the same brewing process is always used, every Zoigl tastes different, because every brewer has his own recipe that determines the ratio of the ingredients. But even with one and the same Zoiglwirt there can be differences from time to time.
