    They are part of the centuries-old tradition of sea-salt production that has been passed down for many generations. During the summer months, locals scrape up the crystals of salt. Once collected, the salt is stored and processed in caves carved into the coastal rock.

    Historically, salt was an important commodity. It was found in Egyptian tombs and transported by salt caravans across the Sahara desert. It was used as a currency during the Roman Empire. Soldiers were paid in salt, which was equivalent to a currency at the time. You could barter, or actually pay in salt. Now, sea salt is most important in Gozitan kitchens. It is used to preserve tuna, to make sun-dried tomatoes, for olives in brine, for preserving capers, not to mention the flavouring of foods.
