Eltville is touristically developed and is known for the production of wine and sparkling wine, which can be tasted in the numerous wineries and ostrich farms. A special feature is the Eltville vinotheque, which, as a merger of the leading winery consumers, enables a product comparison. It is the only local wine shop in the Rheingau and one of the few in Germany. Eltville is the seat of today's Rotkäppchen-Mumm champagne cellars owned Matheus-Müller-Sektkellerei (brand MM), the Hessian State Wine Estates Kloster Eberbach and the sparkling wine factory Schloss Vaux and the largest industrial employer in the Rheingau, the Jean Müller electrical engineering factory.
Since 1988, Eltville may call itself Rosenstadt, a name according to which the rose must be a "defining part of the village". The red rose "City Eltville" was introduced in 1990 by the breeder Hans Jürgen Evers and can be visited in the rose garden of the castle. The Japanese breeder Kazuzo Tagashira christened one of his breeds "Beautiful Eltville" in memory of a visit to the city. Last but not least, Eltville with its districts is a stop on the German half-timbered street.

The banks of the Rhine in Eltville serve as a diverse recreation area for citizens, tourists and day trippers. However, this large number of uses led to conflicts due to the high number of visitors - an equalization of the audience flow was necessary. The lounge areas on the shore with their facilities and facilities were getting old and should be expanded and improved. Together with committed citizens, the Hessian city of Eltville created an integrated overall concept with the aim of making the bank of the Rhine functional, green and easily accessible. With the aid of the "Urban Redevelopment" funding program and funds from the city of Eltville, conflicts of use were resolved, needs-based areas for exercise and leisure activities were created, as well as an attractive recreational offer for everyone. The redesign of the banks of the Rhine in Eltville was awarded the prize for contemporary garden culture "Garden Oscar" by the German Society for Garden Art and Regional Culture in 2017.
