        In 1817 Johann Peter Wallenborn founded a brewery for top-fermented beer in Bitburg in front of the Schakentor: the Bitburger Brewery. In 1842 his daughter Elisabeth married Ludwig Bertrand Simon, who was born in Kyllburg. Together they set up the “Zum Simonbräu” brewery bar in their home - the family's ancestral home - which Elisabeth continued to run after her husband's early death.

        In 1906 the Simon family decided to expand the brewery bar to include the “Saalbau Simonbräu”, which was completely destroyed in 1944. After the reconstruction, the popular pub reopened its doors in the late 1940s. Numerous expansion and modernization measures followed, so that the “Zum Simonbräu” brewery bar is Bitburg's top address to this day.
