The beginning of the brewery is considered to be 1848, when Ernst Ferdinand Handke came from Łagów to Witnica and leased, and a few years later bought, the local brewery. Until the end of World War II, the brewery operated under the name Stern Brau. After the war, beer was still brewed here, but the owners changed frequently. In 1992, in order to avoid the takeover of the brewery by foreign corporations and its consequent liquidation, an employee-owned company "Browar Witnica Sp. z o.o." was established. In 1995, it was transformed into a joint-stock company and operates in this form to this day. In 2022, the Lubuskie Museum of Brewing was established on the brewery premises.

The Witnica Brewery started in the 14th century. At that time there was only a small fishing village Vietz in the Warta estuary. Back then, only the monks had the privilege of brewing beer. The origins of today's brewery go back to the year 1848, when Ernest Ferdinand Handke leased an existing brewery with an inn from the fireman family. In 1856 he finally took over the business. Following investments in the second half of the 19th century, the Vietzer brewery became one of the most modern breweries in northern Germany.
After the Second World War, the owner changed frequently. Today's Witnica Brewery in Poland has been able to hold its own despite the economic difficulties and is the only brewery in the Lubuskie Voivodeship.
