    Contrary to what its name suggests, buckwheat is not a grain, but an old useful and medicinal plant from the knotweed family such as rhubarb and sorrel. Stalked heart-shaped leaves and white or pink flowers sprout from a reddish-colored stem. A triangular fruit that looks like a small beechnut ripens in each blossom. This gave it the name "buckwheat". The small fruits are farinaceous and can be ground into flour like grain.

    Buckwheat is probably one of the fastest growing flour crops of all, because it is adapted to the short summers in Central and East Asia. After sowing, it will ripen within 10 - 12 weeks. Because of its sensitivity to cold, it can only be grown as a summer fruit.

    As a particularly frugal plant, buckwheat is ideal for cultivation on the poor heather and bog soils in northern Germany. In the 17th and 18th centuries it became the everyday food of the simple rural population in the Lüneburg Heath. In the form of groats, dumplings and, above all, as an ingredient for pancakes, it had become a permanent fixture in the kitchen. With the emergence of the potato in the middle of the 18th century, buckwheat lost more and more of its importance.
    Buckwheat fields in the Lüneburg Heath nature reserve can be found in the vicinity of Wilsede or at the Tütsberg landscape care center.
