The hops grown in and around Hersbruck have been growing for a while now. The "Hersbrucker Gebirg" growing area, which reached as far as Altdorf and Schnaittacher Land, was for a long time the largest contiguous hop growing area in the world. However, the cultivation was no longer profitable for the smallholder structures. The hop variety "Hersbrucker Gebirg" still exists, in the USA, Canada and Australia it has many fans. Until 1980, a hopscotch bitter was produced in Hersbruck.

In order to curb the heavy import of hops from Bohemia, the city of Hersbruck was awarded the seal of the hops in 1731 and the cultivation of hops was regulated. The Hopfensiegelhalle (today meeting place in the Happurger road) is still a reference to this agricultural past.

Seal hops are certified in Germany by cultivation or origin of certified real hops. According to the Hop Law, which has been in place since 1996, hops produced only in the areas connected to the seal districts may be termed sealing hops.
