As early as 1889, the former mill owner, Karl Symes, received a license to operate a wine and coffee shop. Guests were treated to hearty meals in a thatched vine arbor during the summer. At the same time, the mill was in full operation. Around 1900, up to 500 tons of grain were processed here annually.

The mill was first mentioned in 1397. At that time, the waterwheel still powered a lumber sawmill, which is probably where the word "Holt" in the mill's name comes from. In the mid-18th century, the mill was refitted and equipped with two grinding mills for grinding bread grain and producing animal feed. The extensive expansion of the pond in 1826 served to increase the "energy supply" for operating the mill. While previously the water supply was barely sufficient for half a day, after the expansion, the grinding mills ran for over 10 hours a day.
