Lanzarote, and Arrecife in particular, has been a fishing center for centuries. But in order for the fish to be preserved, huge amounts of salt were necessary. This explains why there are so many salt (extraction) fields on the island and in Arrecife in particular.

These rectangular fields show where these salt pans once were. now they are only historical testimonies. Only the 'Salinas de Janubio' in the south of the island and in 'Los Cocoteros' in the northwest of Lanzarote are still actively used
