The region around the Messolonghi lagoon is Greece's most important salt-producing area, supplying around 60 to 70 percent of all the sea salt produced in the country.
The salt is harvested here in huge, shallow evaporation ponds (the salt pans). During the summer months, the seawater evaporates through sun and wind, so that in autumn the characteristic, brilliantly white salt pyramids are piled up.
