    Emil’s oyster farming in Istria – Istria tip

    Only one thing is important for Emil Sošić's oyster farming. Thanks to the river, the Lim Channel has a lower salinity and a high concentration of oxygen, which makes it ideal for mussel farming.

    In addition to the ostera edulis, the European oyster, Emil also breeds various other mussels. The clam or tartufi di mare deserves a special mention. Emil proudly offers them, knowing full well what excellent quality they have.

    Emil is most likely to be found between 11 am and 1 pm when the daily work is done. Then he likes to take time with his guests and tell them stories. When he opens an oyster, you immediately notice the connection to his product. Every November, Emil releases young oysters into diamond cages and harvests them after three years. There is space for around 30-40 mussels in one cage. It can happen that a tourist asks for fried oysters and oyster soup and Emil sends him away in his charming way: "The restaurant is right over there". We can understand it. You just have to be able to get involved and throw old habits overboard. Such quality wants to be enjoyed raw. Best with a cool sip of local Malvazija wine. This is the best way to enjoy Istria.
