Like many other wineries in the area, the Bodegas Baigorri have spectacular architecture. The cellars are built in exposed concrete, glass and steel.
In this case, the architectural design was oriented to the winemaking process by gravity. In this way, the use of mechanical means that could damage the grapes is avoided: from the moment the grapes are picked until they mature in the barrels, the wine follows a "top to bottom" process in which no machine is involved.
