The brewery was first mentioned in a document in 1600. The reason was the payment of beer tax to the Ochsenhausen monastery, at that time the owner of the Ummendorf village. The St. Medardus estate, as our court name is, was the local bathing room in the late Middle Ages, practically the bathroom of the entire village.
