The first known documented mention of Buch was in 1366, but it could have originated earlier. The place name may have come from a beech grove or a single beech tree.

In 1466, the place, which belonged to the Theres monastery, was plundered by soldiers of the Bamberg bishop Georg I of Schaumberg as part of the Investiture Controversy.

The Eichenbühl forestry house, which belongs to Buch, was built around 1800. The city forest was looked after by its own forester until 1935, and then by the Sailershausen University Forestry Office. The forester's former residence, which belonged to the forestry house, now serves as an animal stable. In 2005, the forestry house was restored by the Nature Conservation Association.
