Because the oyster beds in the bay were destroyed by a mysterious disease around 1920, cultivation in Cancale has since been based on oyster spat brought in from Auray. Nevertheless, attempts are being made to breed oyster spat again in oyster farms in the high seas. These yield a flat oyster, the "reward". The nutty taste is due to the large amount of plankton in the Baie du Mont-St-Michel. The coast is divided by the oyster parks (400 ha) into geometric sections, which are part of the landscape.
