If you want to avoid steep climbs, you should take the route from Habkirchen, which is a nice, even (approx. 3-5%) increase. The descent is then rapid and winding, but thanks to the good surface, you can ride the gravel bike (almost) without braking.

Very nice, fairly even and not too steep climb with a perfect road surface and not so much traffic.
