The Tyrolean organic cheese dairy Walchsee was founded in 1904 by almost 100 mountain farmers as a cooperative. Until 1994, milk was produced in the many small mountain farms of the Emmental valley in the valley of the village of Walchsee. The farmers brought the milk from the farm in winter and from the alpine pastures to the dairy in summer.
The year 1994 brought drastic changes:
60 local farmers jointly switched to organic farming. It was easier for self-confident farmers to meet the requirements of controlled organic farming than to agree on this step among themselves.
