The Prince Bishop's Hirschberg Brewery was founded as early as 1450. Since then, the cellars have been laboriously carved out of the rock to create storage space for the beer of this brewery.

With the invention of the refrigerator, the cellar had its function as a beer cellar. For a few decades it served as a potato and beet cellar. In the spring of 1945, when the war also came to the Altmühl Valley, a large part of the Beilngries population sought refuge in this rock cellar. Then the rock cellar was almost forgotten. It provided shelter for bats and daring rascals who somehow found their way into adventurous tests of courage.
