It was built as a moated castle in the 12th century. During the Thirty Years' War, the castle was besieged by Swedish troops but not taken. It was converted into a four-winged castle. The extensive castle park was laid out around 1880 by Robert von Loebenstein and expanded in 1911. The castle was restored from 1911 to 1912 according to plans by Bodo Ebhardt. Sallgast Castle and Palace have had many different owners throughout their history.

In 1989, the village and Sallgast Castle were threatened with demolition because a neighboring brown coal open-cast mine was to be expanded towards the village. After German reunification in 1990, these plans were not pursued any further.

Today, Sallgast Castle is used by the local authority, and no new tenant has been found for the attached restaurant for some time. The castle park is open to the public.

On September 11, 2008, a fire broke out in the castle's roof, but was extinguished in time.
