The Rhine bank path between Wiesbaden-Schierstein and Rüdesheim is a continuously asphalted foot and cycle path. On nice weekends, the path is completely overcrowded, especially in the city areas. The section between Niederwalluf and Eltville is now closed to cyclists. There are a few opportunities to stop off along the way or you can drive to the towns not far from the shore.
