Cancale originated in the 12th and 13th centuries as a small coastal settlement, dominated by fishing and oyster farming, around the port of La Houle. The first fortified harbors and the old Église Saint-Méen were built as early as the 14th century. Today, numerous sights reflect the town's maritime tradition: the Port de la Houle, the fish market for fresh seafood; the Cale de l'Épi, a historic lock with 19 arches; the new Église Saint-Méen in the Neo-Gothic style; and the maritime bell, a symbol of the old harbor tradition.

The Cathedral of Saint-Vincent de Saint-Malo is the city's most important church building and dominates the image of the old town (Intra-Muros). It was built between 1146 and 1163 on the foundations of an older church and is dedicated to Saint Vincent of Saragossa. The building combines Romanesque and Gothic elements – the nave is Romanesque, while the choir and chapels are Gothic. Over the centuries, the cathedral was expanded several times and, after suffering severe damage during World War II, was completely restored, with the work only being completed in 1972. The interior contains numerous works of art and the tombs of famous people, including the explorer Jacques Cartier and the corsair René Duguay-Trouin. The stained-glass windows depicting scenes from the history of Saint-Malo and Brittany are particularly noteworthy.

The Château de Saint-Malo, also known as the Château de la Duchesse Anne, is located in the heart of the old town (intra-muros). Built between the 15th and 17th centuries, it served both as a military defense and as a representative office for the Dukes of Brittany. It was further fortified under Vauban. The castle suffered damage throughout its history, including during the French Revolution and World War II, but has been restored. Today, it houses the city hall and, until 2019, was home to the Musée d'Histoire de la Ville et du Pays Malouin.
