In response to impending periods of bad weather, spelt grains used to be harvested provisionally before they were ripe. It was quickly noticed that the dried kernels had a particularly tasty aroma when boiled with water. So people began to regularly harvest some of the spelt as green grain before it was ripe - hence the name. Green spelt kilns are small houses where the grain was dried over a beechwood fire. During this process it acquired its specific aroma.
