Made from cow's milk, Neufchâtel is the oldest Norman cheese. Designed in the Pays de Bray, more precisely near Neufchâtel-en-Bray, its appellation has been protected by a controlled designation of origin since 1969. Its heart shape has been held since the Hundred Years' War.
