    The Kbilashvili family's Qvevri workshop and winery is located in the small village of Vardisubani, about 3 kilometers from Telavi. Their workshop is known by several names: Kbilashvili Winery and Qvevri Workshop, Qvevrebi Zaza Remi Kbilashvili and Meqvevre Kbilashvilis Marani.

      Kwewris are large lemon-shaped clay vessels for making wine that are embedded in the ground and in which the grape juice is fermented together with the mash (stems and skins). The bulbous shape of the Kvevris ensures natural circulation, so no further fermentation additives are needed.

      In Kwewris, the wine can rest for decades at just the right temperature. For Georgian farmers, the wine cellar (Georgian: "Marani") is a sacred place and the heart of the house.

      The main task and quality feature of the Kwewris, in contrast to wooden barrel fermentation, was the preservation and development of the variety's own aroma. The Georgian method of kwewri fermentation was used as early as 6,000 BC. Applied.

      Amphorae in the Kwewri style spread throughout the Mediterranean. The production of the thin-walled vessels was complex and required special knowledge; transport was extremely difficult and so they were used from the 1st century BC. Replaced by wooden barrels. In Georgia, wine was made exclusively in Kvevri until the beginning of the 20th century. To this day, farmers traditionally store their wine this way.

      The Soviet Union's economy, which was geared towards mass production, had made the Kwevri method almost disappear. For decades, Kwewri wines were exclusively produced and stored privately. Today, there are only three artisans in all of Georgia who have mastered the art of kwevri making.
