Untermerzbach was first mentioned in a document in 1232, when "Mercebach" was parished to Ebern. In 1369 Lutz von Rotenhan received three tenths. Under Kunz II von Rotenhan, Untermerzbach became Protestant in 1534. In 1675 Georg Wolf von Rotenhan returned to the Catholic Church. Untermerzbach Castle, which was remodeled in the early classicist style in the second half of the 18th century, belonged to the Counts of Rotenhan until they died out in 1886.

All rights of the Bishopric of Bamberg with the Abbey of Langheim, the Barons of Greiffenclau and the Counts of Rotenhan fell to Bavaria between 1803 and 1806. In the course of border adjustments, the place was ceded to the Grand Duchy of Würzburg in 1810 and finally came to Bavaria in 1814/16. In the district of Gereuth is the former prince-bishop's country palace of the same name, which came into the possession of the Freiherren Hirsch auf Gereuth in 1815 in the course of secularization (until 1859).
