The Saint-Roch hill site is home to an abundant heritage of dry stone as well as an old olive grove currently being restored Located on the heights of the village of Caveirac, the Saint-Roch hill extends over approximately two hectares. The site probably had a double vocation of breeding and cultivation of the olive tree before its gradual abandonment. Restoration of the site began in 2008, led by the village teacher at the end of the 1980s. The work accomplished in recent years has made it possible to discover, under the pines and holm oaks, five capitelles as well as several enclosures, some of which still have caches scattered in the walls. The site also has an impluvium for collecting rainwater, as well as a landscape reading table. The old olive grove is destined to become a conservatory of the olive tree, in partnership with the remarkable site of the taste of the olivettes of the country of Nîmes. It also has a function of protecting the village against fire, the clearing of the site located in the undergrowth allowing it to act as a firewall. Note the presence of the Font d'Arques Saint Roch fountain, located below the site, which can also be visited. For the anecdote, the whole sector is very rich in dry stone heritage, and more than 200 capitelles have been listed on the communal ban of Caveirac alone. The management of the site is ensured by the association "Pierre Sèche et Garrigue Caveirac", in partnership with the town hall of Caveirac, owner of the site. The association regularly offers introductory courses in dry stone.
