Salinàio (or Salinaro). An employee working in Salina in an evocative scenery of water, windmills and white pyramids. Always wearing galoshes and armed with a shovel. The most valued salt called Fiordisale Riserva del Mare is very light and floats on the water, therefore it is collected by experts with special nets in the early morning hours, in the absence of wind, to prevent the salt from sinking to the bottom of the reservoir. This salt is considered to be a very rare, precious commodity with a sublime taste, and therefore used mainly in gourmet kitchens.
