This wisdom applied to Franz Renfert in the truest sense of the word in his restaurant, the "Höltnen Schluse": He smoked his ham himself over an open fire and then hung it under the ceiling to dry. A wonderful "Westphalian sky". "The fire has to burn, otherwise it makes no sense!" Franz Renfert knew what he was talking about, the taste of his ham spoke for itself. Unfortunately, Franz Renfert passed away in 2019, but contrary to Fontane's "Ribbeck" fears, there are also sensitive heirs who appreciated the unique gem of Münsterland farmer's taverns and know: They have the "Schluse" directly on the Max Klemens Canal, which gives it its name and the "wooden lock" that used to be there, restored and brought to life with a good look at the structural ensemble. In the spirit of "old Renfert", who, with his motherly wit, knew how to tell many "Dönkes" from Münster and the surrounding area, ensnared with Catholic down-to-earthness and sophistication. Unforgettable is the repeated story of how Pope John Paul II came to eat at the "Schluse" during his visit to Münster in 1987. He landed his helicopter in the field behind the inn and took a seat right by the hearth next to the counter. Of course he was served by Franz himself... You were caught in the Westphalian singsong of the host, amazed, tempted, almost willing to believe the story. And again and again. From time to time there was a schnapps on the house for these innumerable table stories. That's still like that. The consistently recommendable hearty dishes of the house have also been preserved. So everyone stop at this gem, see, marvel, taste and listen to the time. Anyone who has been there and loved the sometimes rough style of conversations around the hearth ("stupid Heini!") will keep coming back. Often with ham sandwich and "double egg" or bacon pancakes (with the emphasis on the second half of the word) along with a Pinkus Alt.
