Inhabitants of Joure are called Jousters; in popular parlance they are also called Jouster Keallepoaten (calf legs). The Frisian "keallepoat" is a cuckoo, which our ancestors brought to the water spirit thanks to the fact that he had so much water for their land. The product consists of two elongated cakes that are baked next to and against each other and therefore resemble veal legs. They are made from rye flour, honey and various spices.
