    The history of the Actien brewery in Bergedorf began in 1863. On a previously undeveloped area between the recently completed Hamburg-Berlin railway line and a long loop of the Bille, a brewery was built that corresponded to the latest technical standards at the time. The proximity to the river was considered fundamental, as was emphasized before the construction: "The water of the Bille is recognized as very suitable for brewing beer ... The second requirement for producing good beer is a dry cellar ... the proximity of the water for the presence of ice, namely the best, the river ice ".

    After the brewery went into operation in winter, this ice was cut from three specially created brewery ponds and stored in the huge vaults of the ice cellar. And there was a good reason for that: Long-lasting mild temperatures posed major problems for the master brewers by the middle of the 19th century at the latest: Bottom-fermented beer with a higher alcohol content was increasingly conquering the mugs. But in order to brew varieties that are known today as pils or lager, the following applied: it had to be cold during fermentation, which lasted several weeks; preferably between 8 and 14 degrees Celsius. There were no powerful industrial cooling systems; they were only available after the development of the Linde process around 1900.

    The branched out ice cellar in the Bergedorfer Geesthang directly below the brewery buildings became the heart of the facility. Due to the stored ice, the temperature in the brick-built halls sometimes fell to freezing point, and straw was used as an insulating layer in many comparable systems. In this way, the beer could be produced all year round at ideal temperatures and stored in a cool place. In addition, the frozen water provided the brewery with an additional source of income - because the ice cream was sold to inns in the summer.
