Made from cow's milk, Neufchâtel is the oldest Norman cheese. Designed in the Pays de Bray, more precisely near Neufchâtel-en-Bray, its appellation has been protected by a controlled designation of origin since 1969. Its heart shape has been held since the Hundred Years' War. Normandy was then English, it seems that the young girls of the region, who had fallen in love with English soldiers, molded the Neufchâtel into the shape of a heart to declare their love for them!
