In the town centre, the parish church of St-Pierre dates from 1630 according to Baudiau, but from the first half of the 16th century according to the Mérimée database. The old parish church of St-Denis was located within the walls of the Château de Thoisy, "adjoining the château of which it formed the south wing". Today, a barn occupies its location according to the Cecab. The current church was remodelled or "repaired" in the 18th century (1758) by the priest Poncerot. The current church has kept its architecture, on a rectangular plan with a hexagonal apse, a wooden barrel vault of the nave, an original off-centre bell tower which makes the slate roof asymmetrical on the façade. In addition, it houses very beautiful frescoes. The cemetery has remained around it.

Bernard Loiseau, renowned Michelin-starred chef, died on February 24, 2003 in Saulieu, is a French chef and restaurateur of the gourmet restaurant Relais Bernard Loiseau, in Saulieu.

Dating back to the 14th century, the Saint-Laurent church in Manlay is astonishing with its architecture: it is said to be a fortified church. Its keep with walls approximately 1.80m thick houses the church choir. In the summer of 1944, the village and the church were burned by the German army in retaliation for the actions of resistance fighters on Bard Mountain. The damage to the church was repaired after fundraising in Germany in the 1960s.

Saulieu, a small, very charming town, right on the edge of the Morvan nature reserve. It is advisable to start the polar bear tour at the tourist information. A polar bear leads through the village (pay attention to the markings on the way) past all interesting sights. A corresponding (French/English) flyer can be obtained from the tourist information.
