    Il castello di Ebenhausen fu costruito dagli Henneberg nel XIV secolo; forse esisteva già un castello agli albori della città di Ebenhausen. Dopo essere stato distrutto nella rivolta contadina del 1525 e durante la Guerra dei Trent'anni, il castello dovette essere ricostruito. Nel 1576 divenne proprietà di Julius Echter von Mespelbrunn e nel 1803, nell'ambito della secolarizzazione, divenne proprietà del governo della Bassa Franconia. Dopo essere stato vacante nel 19° secolo, il palazzo Ebenhausen è utilizzato per l'agricoltura dopo essere stato acquistato da Michael Schubert.
