The cellar castle, popularly known as the "Red Castle", was built between 1726 and 1731 under Prince Abbot Adolph von Dalberg as a summer residence on the site of the old cellar (seat of the tax collector, first attested in 1279). The plans were provided by the court architect Andreas Galasini Mantova.

At the peak of Hammelburg viticulture at the end of the 18th century, 101 barrels with a capacity of more than 700,000 liters could be stored in the huge cellars under the building.

The Hammelburg Winery Castle, also known as the Red Castle, was built between 1726 and 1731 by Adolf von Dalberg (Prince Abbot of Fulda 1726-1737) according to plans by his Fulda court architect Andrea Gallasini on the foundations of a large winery building as a summer residence. From 777 onwards, Hammelburg belonged to the Bishopric of Fulda until 1816 and, as a center of viticulture, needed sufficient cellar capacity, which was created here. On November 3, 1737, the builder Adolf von Dalberg died in his new castle.
