'De Knapkoeker' is a tribute to the Maaseiker folklore group "De Knapkoekers". Their expensive costume looks medieval and the flat rings on their hats represent crackers. The body of the statue, in which you recognize the shape of a ship, refers to the Maasvaart. Through the open shield you can see the heart of the city: "Zjang en Bèr" (the statue of Jan and Hubert Van Eyck). The water and the tree represent 'MAAS' and 'OAK'. The image is by Julia Berger.

The knapkoek (or knapkook) is a cookie from the Belgian-Limburg Meuse Valley.

It is a flat, round cookie with a somewhat crumbly structure, but what characterizes the crisp cookie most are the raw sugar grains that are baked on top. To eat it you have to push in the middle, and then it breaks nicely into 4 parts.

The knapsack is now considered a Belgian delicacy and is sold as a specialty at local, traditional bakeries, especially in Maaseik. However, the recipe is secret and only the real Maaseiker bakers know the real recipe.

It was developed as a kind of ship's biscuit. When Maaseik was still a port, the people on board ate this snack cake. It could last a long time because it cannot dry out.
