Baking houses were built at some distance from the buildings, with the oven at the back and baking tables at the front, to prepare for baking. Racks or shelves were hung on the walls on which the baked goods could be placed. Baking is traditionally done on Fridays. When the kiln was fired with hawthorn or pine wood, it produced a distinct smell due to the combustion of the oils and resins in the wood. The bread absorbed the aroma and thereby acquired a special taste.
