The attention of the De Carlo family towards the magnificent olive produced from their land is testified by the most ancient papers that are preserved on Bitritto. There are many notarial deeds from the second half of the 16th century with which the exponents of the small but industrious family bought and exchanged lands. From the papers it emerges that for two centuries the family had the double surname "de Mariano de Carolo". Starting with that Carolo de Mariano who appears in a deed of 1598. In those years Marianus de Mariano was mayor of the Magnifica Universitas Bitricti and prior of the confraternity of the S.S. Sacrament. During the 1600s various personalities distinguished themselves within the community for their relations with the authorities of the area and in particular with the Viscontis, barons of Loseto, engaged on a large scale in the production and marketing of oil. Among these emerged Nicola de Mariano de Carolo, son of Nardo Antonio.
