    Schwägalp alpine cheese dairy
    Steeped in history and unique
    Alpkäse stands for an open and hospitable way of life and is deeply rooted in the age-old Swiss alpine tradition. Originally, cheese was only made in the Alps to preserve summer milk for winter. It was not until the 19th century that farmers began producing cheese in the valley as well. This means that Swiss cheese has its origins in alpine farms. Even today every alpine valley has its own alpine cheese. Every alpine cheese is different, because locally different herbs, production methods and traditions shape the cheese in terms of aroma, color, shape, degree of ripeness and degree of hardness. Alpine cheese is part of the lively alpine culture.
    Carefully handcrafted
    Alpine cheese is made from natural Swiss Alpine milk. The alpine meadows with up to 100 different herbs and grasses give it its unique taste. A cheese may only be called "Alpkäse" if milk production and cheese-making take place on the Alp. In contrast to mountain cheese, alpine cheese is a seasonal product that is only produced from May to September.
    Alpine lift
    As soon as spring arrives in the mountains, the herdsmen with traditional costumes and artistically decorated animals leave the valley operations. Your path is lined with many onlookers and folklore fans. Your home is the alpine hut for 80 to 120 days. Then the alpine cheese season begins and a stressful life with little comfort begins.
    Busy days
    From early in the morning to late in the evening it means milking, cheese, buttering, feeding the animals, caring for claws, cleaning pastures, preparing wood, cooking and looking for lost animals. And that seven days a week. Nevertheless there is now and then time for an "evening sitting" or for music and dance.
    Alpine descent
    When the days get shorter in autumn and the grass and herbs grow more slowly, it is time to drive the cows onto the lower "Stafel" and later down into the valley. With a little sadness, the herds set off towards the valley. The festive alpine descent of the decorated animals and herdsmen is accompanied by spectators and many festivities.
